Preparation and Safety
This mix will make 12 cupcakes or the sponge base for a 7'' Victoria sponge. Follow below to make perfect cupcakes
Pre-heat oven to 180°C/ Fan 160°C/ 350°F/ Gas mark 4
Place 12 cupcake cases into a muffin tin.
Empty the cake mix into a large bowl and add 2 medium eggs and 8 tbsps (120ml) semi-skimmed milk.
Using an electric whisk, whisk on a medium speed for 2 mins.
Divide the mixture equally between the cupcake cases.
Bake in the centre of the oven for approx. 18-20 minutes, until risen and cooked through.
Cool in the tin for 5 minutes before transferring to a wire rack.
Once the cakes are completely cool, be creative with your own icing and decorations.
