Red Pepper Tortelloni in Mixed Herb Passata
Ingredients:
- 1 tbsp of olive oil
- 1 tbsp of fresh lemon juice
- 1 clove of chopped garlic
- A handful of fresh basil
- A handful of fresh baby spinach
- 400g of Mr Organic Mixed Herbs Passata
- Salt and pepper to taste
- 250g Mr Organic Tortelloni
Method:
1. Heat the olive oil in a saucepan over medium low heat. Add the garlic and cook for 1 minute or until it is golden.
2. Add the passata, lemon juice, fresh chopped basil and baby spinach. Bring to a simmer until the spinach has wilted. Season to taste with salt and pepper.
3. Meanwhile cook the Tortelloni following the directions on this packet. Drain and serve with the passata sauce. Add some nutritional yeast and extra fresh basil leaves if desired.
